Oh Little Town.. Here I Come!

To say that I can’t believe that I will have been in Florida and my hometown for almost two entire days this time next week, is a complete understatement. I haven’t been back since December of 2009, and I can’t even remember the last time I ventured back without Nate. We haven’t really spent more than a day or so apart since we’ve been married- so this will be pretty weird! I know I’ll be so happy to visit with my parents that I won’t think about it at first, but by the time the 11th rolls around I know I’ll be so excited to see him - even if I am sobbing over leaving my Mom. ;]

I get super emotional over the whole flying bit. During the flight I spend my time listening to music that fits my deep and emotional mood while I contemplate how small we are and how overwhelming it is to wake up in one place and fall asleep 875 miles from there. Yes- really. Every time. (Emmy and I are the same person- I just don’t know how to write amazing poems about my feelings.)

I will spend the entire trip feeling like I’m a teenager again, because being back in that town makes me nostalgic like no other. I always have to visit my old place of employment to see all of my favorite bosses, and they always ask me when I’m coming back because man, I was just so talented at my Bob Evans hostessing/waitressing job that no one could ever replace me! ;] I will pour over all of the things in my old room (that are right where I left them) and my Mom and I will walk around the mall that we used to go to in the Summer just to be in the air conditioning when I was 5 or 6 and we didn’t have any of our own! The same mall that I spent pretty much all of my teenage life at- if I wasn’t hanging out with friends at Wal Mart or in the Taco Bell parking lot (yeah guys, it’s a small town!)

I’m super excited to hang out with my girlfriends on that Wednesday night- we’ve planned to meet up at a local Mexican restaurant for dinner and .99 margarita night. (I know right?!) That should be pretty amazing considering I haven’t seen most of them since my wedding, a few in about two years, and a friend that I haven’t seen since I was about 15 or 16 may actually be coming. WOO.

I’m planning to do a lot of documentation while I’m down there! I want to show you guys where I’m from and what I love about the town. I’ve never really talked about it on the blog, but I think it’s time! When I tell people where in Florida I’m from they’re just like, “Oh yeah! … where is that?” and if just a handful of you can say that you know where this little town is- I will have done my job. ;] Small towns really do have the best charm- local restaurants, historic down town areas, haunted hotels, and in this case- a race track! I can’t wait to show you around!

Spaghetti Salad- A Summer Dish

One of my absolute favorite things to make during the hot Summer months is a little cold pasta dish that I like to call Spaghetti Salad. Actually, I like to call it that because my best friend’s mom called it that when she introduced me to it and taught me how to make it (thanks Tracy!). It’s not a particularly hard or complicated thing to make.. but for something so simple, it’s absolutely refreshing and addicting to munch on!

SO first of all, here is what you need:


A box of spaghetti (obviously?), little tomatoes or a regular big ol’ tomato (in which case I would only use half), a cucumber, a bell pepper, a can of baby corn, a can of chopped or whole black olives, and one bottle of Zesty Italian dressing. Now, of course, if you despise black olives or something you can leave them out. I believe when I first learned to make this I put chopped onion in mine, but I decided to eliminate that later due to my own personal preference!

Now, go ahead and get your spaghetti cooking on the stove and start chopping! This is the most annoying part of the whole process: chopping everything into tiny pieces.

Your spaghetti will finish cooking long before you’ve finished, unless you are a chopping machine. So drain your pasta as you normally would, set it in the sink, and run cold water over it. Flip it around and make sure the cold water cools it down as much as possible. I use my little sink sprayer for this and it works well! Shake out the remaining water and let it drain while you finish.

Once you’re through cutting everything up bring your pasta over to your veggies and the big bowl you’re going to put it all in- which should have a lid that seals well! Take a handful of pasta and drop it in the bowl. Take a handful of veggies, and drop it in on top of the pasta. Then, squeeze a little bit of zesty italian dressing in on top of that. Repeat until you’re all out! I also sprinkle salt and pepper on each layer. The last few times I’ve made this I’ve ended up with about 1/4 dressing left. You can always add more later!

After you’re all done- seal the lid on tight (I accidentally half-assed the lid thing once- BIG MESS!) and shake the contents to mix everything up. Put it in the fridge to chill for a bit before eating and make sure to shake it a little before serving to mix up what has settled to the bottom. Enjoy! (I literally eat this for lunch for at least a week straight when I make it!)

The Birthday Girl!

H-hey! Wednesday was my birthday- in case you’ve been living under a rock and avoiding my narcissistic tweets. ;] I had it all planned out Wednesday. I would wear something blog worthy, take pictures, and post said pictures. Did this happen? Everything but the blogging part. And I will blame two very yummy margaritas for that. At least, I think that is where my migraine came from but who can ever be sure…

I scored a free $20 Groupon to Blue Agave Mexican Cantina after using a $10 coupon code that I had left over from referring a friend. After I saw “fried avocado” on their menu, I knew that this groupon would be mine! I got it back in April and had no intentions of saving it for my birthday but we’ve been very busy and haven’t had the time to use it, so Nate suggested we cash in our free $20 for my special day! I thought it sounded perfect- birthday margaritas? Yes, please!

I adore these photos, in the most non-selfinvolved way possible. I just really love the lighting. I didn’t do a darn thing to the majority of them, minus lowering the exposure a tad on just a few. This dress was a cheap find on the sale wrack in Pac Sun. The print almost looks like some sort of camouflage pattern at a distance- but I assure you it is not! My favorite part? Well, I have two. One- the fitted waist with a full skirt! Two- a dress that is LONG enough on me! I’m kind of a giant, especially in these 4 inch Heda wedges!

Blowfish Shoes, one of my lovely August sponsors, sent these babies over just in time for my birthday! When I found them on the doorstep after work last week I literally ran inside, tore the box open, ran upstairs to find Nate (in the shower), and made him open the shower door while I shoved them at him- “LOOK, LOOK! *squee*” It’s safe to say that I sort of love them. Nate was like.. YAY…. personal space…?

I can’t wait to share the photos from our little dinner date downtown. I wanted to squeeze them in to this post, but why not keep you in a little bit of suspense!? I also can’t wait to share what my sweet Husband bought me for my birthday. You MAY have caught wind of it already, via twitter or facebook.. but humor me and act surprised later on!

The Days Go By..

Hey there loyal readers! I say “loyal” because you must be if you’re still checking this little blog for updates! Sorry about the unexpected break- I didn’t realize just how upside down our lives were about to flip there for a little while or I would’ve known better than to think I’d be able to keep up around here! But more on that later! I just wanted to pop in and say thank you to everyone who continues to read and contact me to see how things are going. You all are what makes blogging fun and I really appreciate each and every friendship.

Today is my 24th birthday, by the way! The lack of reflective blog posts leading up to this day proves how preoccupied I’ve been! I never miss a chance to lay the nostalgia on thick right before turning another year older. But I suppose I’ll spare you for now. I’m so excited to go out to dinner tonight with my sweet husband! We’re hitting up a new Mexican restaurant downtown that we’ve never been to before, so here’s hoping it’s fabulous. They have fried avocado on the menu… so I have high expectations!

I’m currently on break at work as I write this. Can’t wait to head home and take a few outfit pictures. I’m breaking my favorite fashion rule to break today by wearing my new brown Heda Wedges c/o Blowfish Shoes (which I can’t wait to show you and link you to, because you will want to buy your very own!) with a dress that has black and grey accents in the pattern! I love breaking the rules .. it’s just too easy and opens so many extra outfit possibilities!
